A problem with using family recipes–even ones that are neatly typed onto an index card–is that it isn’t always written in a way that leads to the desired outcome. As you know, I love fruit-based desserts. So, naturally I had to try this one when I found it in my grandmother’s recipe box. I made it as written and it was a disaster! I added the topping mixture to the water instead of adding the water to the apples so that they could be steamed. I ended up with a gloppy-undercooked mess. However, I knew the recipe had potential so I tried it again and was rewarded for my patience. As English teachers have been telling their students for eons, punctuation matters!
4 cups tart apples, chopped into large chunks
1/2 cup water
1/2 cup butter or margarine, melted
1 cup sugar
3/4 cup cake flour
1 teaspoon cinnamon
Lightly cover a glass pie plate with cooking spray.
Pour apples into the pie plate. Add the water to the apples.
For the topping, mix the butter, sugar, cake flour, and cinnamon together in a bowl. Spread fairly evenly over the apples.
Bake for 45 minutes in a 350ºF oven.
Cool, slice, and serve.
