When I was a girl, I loved it when filmstrips were shown at school, in chapel, or Sunday School. If the filmstrip had a record to go with it, I thought it was the height of technology. I can still hear the ding to alert the teacher to advance the filmstrip to the next frame. When I was a schoolteacher, we didn’t have projectors with a record player but rather a cassette tape player attached. Now, of course, we have DVDs and You Tube and PowerPoint to use in the classroom. But, you know, PowerPoint slides really aren’t that far removed from those old filmstrips.

The first week back to campus after the summer break is always an adventure and it is even more so at the local community college where I take my fashion design sewing classes and my husband teaches. Aside from the terribly lost freshmen trying to find their classrooms, traffic is snarled around campus because everyone actually is going to class and parking is at a premium. The smart students are the ones who ride their bikes to campus. There are plenty of racks and poles where they can park their bikes. Unfortunately, some of the bike riders have a tendency to engage in behaviors found in this filmstrip from 1958.

As you listen to the dialogue, pay attention to the rhyming scheme.

Bike Behavior (A Cathedral Filmstrip) Approximately 7 minutes long

My summer is coming to a close for me. School starts for me on Monday. For many, school already started a couple of weeks ago! I am feeling wistful about this summer. I had all sorts of plans regarding what I was going to accomplish–and some I have–but “family” ended up being the theme for the summer. There was sadness in having to care for sick family members and there was joy in being asked to be my nephews’ godmother. We enjoyed a visit from my husband’s aunt and uncle and the delight of holding baby Alice as her joie de vivre entrances us all. And, finally, my online family of readers continue to embolden me to share my thoughts about being a modern retro woman.

When I was a teenager, The Beach Boys were my favorite group. I’d wrangle my baby sister, Jill (Alice’s mother), into acting out their concert album using her Fisher Price Play Family Village people (those little wooden dolls). We spent hours and hours and hours listening to the Beach Boys. I wanted to be their Surfer Girl. (We won’t discuss my BFF Diana and I trying to learn how to surf using her father’s longboard in her backyard pool…crazy teenage girls! *laugh*)

Since we’ve been (mostly) having fun all summer long, it just seems appropriate to close out summer’s Theatrical Thursdays with The Beach Boys singing “All Summer Long”…

I’ve had various theme songs over the years–”One Moment in Time” by Whitney Houston got me through graduate school–but last week I rediscovered “I’m Feeling Good” when I heard Nina Simone’s version on The Penthouse internet radio station (not affiliated with the magazine). Of course I had to go to You Tube to see if I could find it and I was reminded that Michael Buble’ covered it. And, I already had it in my cd collection! To me, this song epitomizes my desire to live in fabulous technicolor.

His official video of the song is a James Bond spoof. But I prefer the version of him singing it for the David Foster PBS special because of his energy:

I’m back. The most pressing family issue has been resolved (for the time being, at least) and my husband’s aunt and uncle are on their way to my in-law’s home after their short visit here.

Have you ever looked at the meat cuts chart in your favorite cookbook and thought to yourself, “okayyyyyyyy…this isn’t really helpful?” I have. For most of our married life, our primary sources of animal protein were hamburger, chicken, eggs, and cheese. I would occasionally try cooking a roast in our slow cooker but it always turned out bland and overdone. Since ours was a mostly animal protein-free diet, I really didn’t worry too much about it. That all changed when I started to collect the vintage cookbooks in earnest and discovered that it wouldn’t take me all day to cook fabulous meals.

But to make a fabulous meal, we also need to know not only our meat but the meat grade. You may discover, like I did, that even though your grocery store makes it sound like they are selling only the very best beef, they may in fact be selling you “meh” beef. As you will see in the video, all meat in the United States is inspected and assigned a grade.

U.S. Department of Agriculture Quality Grades for Beef:

Prime grade is produced from young, well-fed beef cattle. It has abundant marbling and is generally sold in restaurants and hotels. Prime roasts and steaks are excellent for dry-heat cooking (broiling, roasting, or grilling).

Choice grade is high quality, but has less marbling than Prime. Choice roasts and steaks from the loin and rib will be very tender, juicy, and flavorful and are, like Prime, suited to dry-heat cooking. Many of the less tender cuts, such as those from the rump, round, and blade chuck, can also be cooked with dry heat if not overcooked. Such cuts will be most tender if “braised” — roasted, or simmered with a small amount of liquid in a tightly covered pan.

Select grade is very uniform in quality and normally leaner than the higher grades. It is fairly tender, but, because it has less marbling, it may lack some of the juiciness and flavor of the higher grades. Only the tender cuts (loin, rib, sirloin) should be cooked with dry heat. Other cuts should be marinated before cooking or braised to obtain maximum tenderness and flavor.

Standard and Commercial grades – are frequently sold as ungraded or as “store brand” meat (my emphasis added).

Utility, Cutter, and Canner grades are seldom, if ever, sold at retail but are used instead to make ground beef and processed products (my emphasis added).

You can imagine my surprise when I realized that my grocery store was selling a lower quality meat than I thought they were. I hadn’t paid attention to what “Select” meant because I thought it was an advertising gimmick. I mean, come on! This is the 21st century, don’t we have the technology and resources to only have the top grade in our meat cases? Apparently not. According to AskTheMeatMan.com, “Select” is the grade that Walmart sells. And, the bottom grades just reinforce my practice of grinding my own meat at home. No wonder it is always full of cooties and being recalled!

I found this wonderful video produced by the U.S. government’s Office of Price Administration during World War II to help educate homemakers on the various cuts of meat and how they can help ensure that everyone is doing their share to keep prices low. The grading system they describe is a little different than the one currently in place but you will be able to get the gist of it. My favorite thing about this video, though, is that they walk us through the butchering process so that we can see exactly what we are getting with each cut of beef. It is a little dry, in parts, but well worth hanging in there to watch the entire film.

Before there were dance competitions, there were dance parties. And the biggest name in dance parties was American Bandstand. On August 5, 1957, American Bandstand made its network premier on ABC. Before that, it was a local Philadelphia television show. Believe it or not, it was a daily 90 minute live show until 1961! The daily format was scrapped in 1963 when it started airing on Saturday afternoons.

In the early days, there was a strict dress code and I remember seeing an interview with Dick Clark pointing out that a lot of the girls attended local Catholic schools and would go straight to the studio from school because the show started at 3:30. Teenage girls across the country started emulating the styles of their favorite dancers never realizing that the dancer was still in her school uniform! You could say that the Catholic school girl look became the rage because of American Bandstand.

I watched the show religiously growing up. I loved watching the dancers. I loved the Rate-a-Record segment. I loved the singers. But about the time “the bump” and disco came along, my fascination with the show waned and I stopped watching it. By the time the show finally ended in 1989, I had long been married and moved onto other interests.

Soapbox: While I understand that many of the girls were still wearing their school uniforms and Dick Clark required a suit and tie for the boys, I find it refreshing to see the teenagers dressing with a sense of decorum in the early years of the show. I’m around college students all of the time and I am dismayed by how slovenly so many of them look or how they don’t seem embarrassed at all to “show their wares” to the world. Sometimes I want to go up to a girl and say, “Yes, they’re lovely. All of the boys have had a gawk at them. You can put them away now.” And then these kids don’t understand why they aren’t being taken seriously by their peers or professors. I know I’ve harped on this before, but truly, personal appearance matters. It telegraphs a message on how you want to be treated by others. /Soapbox

Here is a “timeline” clip of dances featured on the show, narrated by Dick Clark himself:

On July 29, 1957 Jack Paar began his stint as the host of the Tonight Show–changed to The Jack Paar Show–on NBC-TV. He was the host for five years. Mr. Paar’s version of The Tonight Show was very different than today’s. He preferred literary types over Hollywood stars trying to promote their latest movies. A factoid to toss out at your next cocktail party: While Paar did not originate the phrase “I kid you not,” his frequent use of it made it an American catchphrase.

In this clip, Jack Paar is trying to do a live commercial for Poloroid camera (click here for Pam’s recent blog posting about the new Poloroid camera on Go Retro!). A problem arises when Jerry Lewis decides to get into the act…

“Practice self-discipline and keep emotions under control. Good judgment and common sense are essential.” John Wooden on Self-Control

I’ll admit that the Baby Boomer in me was annoyed by Coach Wooden’s admonition to practice self-control by keeping emotions under control. After all, the whole emotional thing was one of the things that caused a big rift between our generation and our parents’ generation. We wanted to feel our emotions instead of just “sucking it up.” But, as I dug deeper, I realized that he wasn’t telling us to be robots. He was telling us to avoid emotional drama–the peaks and the valleys–so that we can be successful. We can’t always control what happens to us but we can take precautions so that we are prepared when things happen. And, more importantly, we can almost always control how we react to situations. Optimists are generally healthier, happier, and more successful than pessimists. Remember, optimism isn’t “fake happy” but rather an attitude.

I used to have friends who were drama queens. There was no middle ground when it came to emotions. Everything was either over-the-top happy or life-isn’t-worth-living-anymore depressing (Note: I’m not talking about those with bi-polar disorder). Drama queens suck the life out of other people with their runaway emotions. When I began disengaging myself from their drama, I discovered that they weren’t really attached to me…just my energy. They found new people to suck into their runaway-drama-filled-emotions.

As homemakers, we set the emotional tone for the family. I believe it is important for us to feel our emotions but not let them control us. When our emotions control us, we aren’t able to see a situation clearly and often make poor decisions that we end up regretting (and, believe me, I’ve got my fair share of regrets caused by out of control emotions). By being in charge of our emotions, we can help those around us learn how to cope and deal with negative emotions while also helping them realize that we don’t feel happy, happy, joy, joy all of the time (despite what advertisers would have us believe).

This campy little Coronet Educational Film, from 1950, teaches teenagers that they can be in charge of their emotions rather than letting runaway emotions ruin their day. It is based on Behaviorism but, even though I’m in the Cognition camp, I think it holds some valuable gems.

Control Your Emotions (13 minutes)

In yesterday’s post, I talked about how American women seem to focus more on being liked than being respected. But, as I’ve reflected upon this more, I’ve also been thinking about how modern “relationships” are so transient. We stick around only as long as our “needs” are being met. And so, we run around expecting everyone else to meet our needs and become so self-absorbed that we forget that we are responsible for satisfying our own emotional needs within ourselves. We’re not going to find satisfaction somewhere “out there. “ It has to come from within. It is only then that we can be fully present with someone else.

This Coronet Film from the early 1950′s is about a young boy who is feeling lonely. His mother explains to him three rules to help him develop friendships. Even though this gentle film is geared toward young children, it is a good reminder for most adults, too! (Note: the opening and closing credits have been lost to time)

Yesterday, I began the unit in The Home Economics Omnibus on being a well-dressed girl. But part of being well-dressed is also being well-groomed. You can be wearing the best clothes money can buy but still be a mess. Thank goodness the Committee on Medical Motion Pictures from the American College of Surgeons and the crazy film department at McGraw-Hill created an educational film for us called Body Care and Grooming in 1948. Apparently the students at Cornell were having some grooming issues because it was partially filmed there.

Enjoy and be sure to wash your hair at least every two weeks!
