It didn’t.

Around 6:00, the dough had finally risen.

Dough cut into four loaves.

I tucked them all into their respective loaf pans and covered them with their plastic wrap blankets. The Mister said it looked like a nursery. We waited. And we waited. Finally around 11:00 they had doubled in size. I forgot to take a photo before putting them in the refrigerator. I was tired and wasn't going to stay up to bake bread. I'm not THAT dedicated!

The poor guys didn't like being in the fridge. They got all shrivelly. I took them out to bring them back to room temperature. In theory, it should just take a couple of hours for it to come to room temperature and the yeast be all happy and gassy again. So, I took them out at 7:30 in the morning and it took until almost 5:00 for them to get back to baking condition. *sheesh!* Good thing I wasn't in a hurry or anything!

Still not as high as I would have liked but they were going in! The one on the right was our little runt loaf. He was The Mister's favorite.

The time in the refrigerator acted as a yeast retarder so that would have more time to do something or another with the net result of a tangier flavor. Perfect!

I’ve mentioned before that music is the gateway to my soul. I grew up surrounded by church music and singing in youth choirs. There are times an old-time hymn will start playing in my head to bring me comfort and reassurance, especially on days like today when I’m feeling frustrated by this holding pattern that I’m in. Around noon, “Let Us Break Bread Together (On Our Knees)” started going through my head. Only it wasn’t let us “break bread,” it was let us “make bread.” I took that as a sign.

The temperature here in Los Angeles was perfect bread making weather of about 80°F today. I’ve been neglecting my bread making for a couple of months and The Mister has been subsisting on that store bought stuff that is woefully lacking in flavor. Even though I got a late start on it, I’m hopeful that we’ll have a loaf ready by dinner time *fingers crossed*

You can find the recipe by clicking here.

Ingredients for four loaves of bread. The recipe came with the hand crank bread maker that I found at an estate sale.

Scalding the milk. I actually used the rest of some half and half I had on hand. I read somewhere that scalding the milk releases some sort of enzyme and that is why we're suppose to do it.

Adding salt, sugar, and shortening. This recipe calls for 2 Tablespoons of salt which always seems like a lot but then I have to remember that it is spread across four loaves.

Adding water and then I'll let the mixture cool to lukewarm. At this point I start measuring out and sifting the 12 cups of flour.

This is 12 cups of sifted flour. The sifter was my paternal grandmother's and the measuring cups belonged to my maternal step-grandmother. I used a mix of 1/2 bread flour and 1/2 white whole wheat flour because I didn't have enough bread flour and I didn't have enough honey to make the whole wheat recipe. I think it is impacting the rise.

I now make tick marks after each sifting each cup. I've been known to lose count around cups 7 or 8!

The yeast getting all frothy and happy. Little does it know that it will be getting some serious gas, soon! I use regular yeast when I use a vintage bread recipe. I just get better results with it than with the fast rising and/or bread making machine yeast.

The crank handle machine attached to the counter.

First liquid then flour goes into the breadmaker and is stirred.

The top is latched on and then the handle is turned for five minutes. Five very long minutes. People who claim that time stands still for no one has never turned a hand-crank bread machine for five minutes. If you want to develop your biceps, get yourself one of these suckers.

The dough after five minutes of kneading/cranking.

The dough after rising for two hours. Hmmm...it has risen quite enough. I'll let it rise some more....

So…stay tuned! Did the dough continue to rise? Will The Mister get nice, fluffy bread or dense, door stop bread? You will find out tomorrow!

The Ultimate Turkey Leftovers Recipe~Turkey Glace

If I had known how wonderful this recipe was, I would have given it to you the Monday before Thanksgiving. As I was testing it, I realized it is The Ultimate Recipe for what to do with leftover turkey/stuffing/gravy/cranberry sauce. I’ll provide the official recipe below, but the “quick and dirty” recipe is as follows:

While clearing the table, get out a shallow baking dish, 13 1/4 x 8 3/4 x 1 3/4 inches. Line the bottom of the baking dish with leftover stuffing, about 1 1/2 inches deep. Cube about 6 cups of turkey. Spread that over the stuffing. Pour and spread leftover gravy on top of that. Cover with aluminum foil and save for the next day (or send home with a guest with cranberry sauce). When ready to serve, bake in a 350* oven for 20 minutes. Spread 2 cans worth of cranberry sauce over the top and bake another 10 minutes. Serves about 12.

Here is the “official recipe:”

Turkey Glace
Ladies’ Home Journal Cookbook
3 teaspoons salt
1 teaspoon thyme
1 teaspoon poultry seasoning
1 cup finely chopped onion
1/2 cup flour
2 cups turkey or chicken broth or part broth and part turkey gravy
1/4 cup chopped parsley
2 (1 lb) cans whole cranberry sauce

Saute’ the bread cubes in a frying pan with 1/4 cup butter. Season with 1 teaspoon salt, 1/2 teaspoon thyme and 1/2 teaspoon poultry seasoning. Spread on the bottom of a shallow baking dish, 13 1/4 x 8 3/4 x 1 3/4 inches. Spread the cooked turkey over the bread cubes. Saute’ the chopped onion in 1/2 cup butter; add the flour and the turkey or chicken broth or part broth and part gravy, seasoned with 2 teaspoons salt, 1/2 teaspoon thyme, 1/2 teaspoon poultry seasoning and the copped parsley.
I love pumpkin pie. Well, homemade pumpkin pie. I usually end up disliking the pumpkin pies that I order at a restaurant. And the frozen pies? *phhht* Why bother?

My Honey loves pecan pie. He tells me not to bake any pecan pies for him because it would be too tempting. But, whenever we are out and he spies a pecan pie in the pie safe, I know he’s going to order a slice.

Leave it to one of my grandmother’s cousins and The Box to come up with a variation of our two favorite pies: A Pumpkin Pecan Pie.

I must confess that this didn’t have as much pumpkin flavoring as I would have liked but My Honey really liked it and it will probably join the dessert rotation.

Watch your baking time. Mine burnt a little but I don’t know if it was the recipe or that I was having trouble with my oven again (my landlord thought that having the regulator repaired, yet again, was too annoying and a new range arrived on Monday).

I found this recipe in an international meat cookbook published in 1967. I’ve discovered that starchy food and I don’t get along but I sure miss my pizzas!

This beef roll has all of the flavor of my favorite pizzas without all of the after effects. It hits the spot for dinner and it pretty darn good as a cold lunch, too!

No need to get fancy with this recipe. I just used packaged uncured ham and packaged mozzarella cheese from Trader Joe’s.

Polpettone alla Siciliana

(Sicilian Beef Roll)

Ingredients

1 1/2 pounds ground beef
1/2 cup tomato juice
2 eggs, beaten
1/2 cup soft bread crumbs
1 1/2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon oregano
2 cloves garlic, minced
3 Tablespoons dried minced parsley
8 slices cooked ham (approximately)
8 slices mozzarella cheese (approximately)

Method

Mix everything but the ham and cheese together.

On a large sheet of plastic wrap, pat the meat mixture into a rectangle about 10 x 16 inches.

Arrange the ham and cheese on it and then roll up like a jelly roll, using the plastic wrap to help guide the roll.

Place the roll into a baking dish sprayed with cooking spray.

Bake in 350ºF. oven for 1 hour.

Let the roll stand at room temperature for 15 minutes before slicing it.

Enjoy!

When I was doing the photo shoot for this recipe…or, I should say, I was attempting to do the photo shoot…it was over 100F degrees outside and not much cooler inside. The poor goblins were having a hard time holding their sherbet….

We had these the other night and they are just so good that I had to share the recipe with you again. This article was originally posted on July 12, 2010.

*****

The more I learn how to eat like my grandmother, the more I am amazed at the portion sizes–and how satisfied I feel eating less food. I was reminded, once again, how little meat we really need to eat while I was making some hamburgers to barbecue on July 4th.

I’ve never been very good at forming hamburgers. They always ended up looking like rocks. And they felt like rocks when we tried to bite into them. And then I went through a period where I couldn’t stand touching raw meat/poultry. I don’t know why, but I was just was totally creeped out by it. As a result, The Mister took over the responsibility of forming the hamburger patties on those rare occasions when I would serve him something other than beans and rice.

Because we had been away, The Mister was playing catch-up with his projects and had to go the studio to work for a little while on July Fourth. That left me with the task of forming the hamburgers. Now, since I’ve started cooking like my grandmother, I’m not creeped out by raw meat anymore. I’m not afraid to stick my hand into a bowl to mix everything up. But, I was still concerned about forming the hamburgers.

And then I remembered it.

One of the gadgets I had inherited from my grandparents was a “hamburger press.” It works like a charm! I just filled the press with the hamburger mix, turned the knob and out came a perfectly formed hamburger. Out of curiosity, I decided to weigh a few of the patties individually. They all weighed 4 ounces almost to the T. It was amazing to me. In my grandparents’ day, that would have been considered an enormous hamburger. To put it into perspective, in the olden days of my teenage years, these hamburgers would have been considered McDonald’s largest hamburger–The Quarter Pounder (the Big Mac has two 1.6 ounce hamburgers for a total of 3.2 ounces of meat). McDonalds’ original hamburgers have 1.6 ounces of meat. That’s it. To put even more perspective on it, McDonalds’ smallest hamburger is roughly the daily protein portion recommended by the American Heart Association for a 150 pound person (not the 40 pound children that we feed them to–see the Modern Retro Woman post on the topic of protein requirements).

A few years ago, I found a recipe for Deviled Beef Patties in the Better Homes and Gardens 1972 edition of Eat and Stay Slim. I know this cookbook is beyond my 1960 cut-off date, but it belonged to The Mister’s grandmother so I snagged it when I got the chance. I have since seen many recipes called “Deviled Something” and, of course, there are the very popular “deviled eggs.” My unscientific research has led me to believe that anything called “deviled something” means that there is going to be mustard, for sure, and often horseradish, too. If anyone knows the etymology of it, please share it with us. I’m guessing that the mustard (and horseradish) are supposed to make the food spicier and “hotter,” thus the reference to the devil.

Because these hamburgers are so moist, be patient when cooking them. If you try to flip them too soon, they will disintegrate. If you are cooking them stovetop, that isn’t necessarily a problem if you don’t mind crumbly hamburgers. But on the barbecue, a good portion of the hamburger will fall between the grill rungs (and, for the sake of my marriage, I will refrained from telling you why I know this to be true…).

I make up a double or triple batch, form the patties, wrap the uncooked extras individually in plastic wrap and then wrap a group of them together before freezing them. The plastic wrap aids in separating the frozen patties from each other. I just cook them in the pan from frozen and it takes only a few minutes on each side. Yummy!

Deviled Beef Patties

Combine 1 pound ground beef, 1 egg, 1/4 cup chili sauce, 1 teaspoon prepared mustard, 1 teaspoon prepared horseradish, 1 teaspoon Worcestershire sauce, 1/2 teaspoon salt, and dash pepper. Mix well. Makes four 4-ounce patties.

I’m off to run errands but I thought I’d share this post from two years ago. I don’t know about your neck of the woods but it is scorching hot here and I’ve been thinking about my grandmother’s ice cream recipe for the past few days. To me, this is so much tastier than any store-bought ice cream could ever be and is perfect with some fresh fruit on top.

Enjoy!

As I type this, I have ice cream ripening in my Handy Freeze electric ice cream maker. The metal on the maker is all rusted and the paint has peeled off but, for being at least 50 years old, it is a workhorse and outlasted the plastic maker I owned in the late 1980′s.

There is only one type of ice cream that can be made in my grandparent’s Handy Freeze. Not because of the limitations of the freezer. No. It is because of tradition. When I took a quick taste of the ice cream after it had finished churning, it took me back to my grandparent’s back yard in North Hollywood. The women would be in the house, cooking and gossiping, and my father and grandfather would be sitting on lawn chairs in the driveway with the ice cream freezer. The children would stand around them in gleeful anticipation of Grandma’s Ice Cream.

This is just a plain old vanilla ice cream. I have added fresh peaches or strawberries in with the mix, but there would surely be a photo of this ice cream in the dictionary next to the “comfort food” entry.

I greedily tore open the envelope and beheld the 1939 Heinz Recipe Book (with War Supplement). I thought I’d died on gone to heaven (except that I had a ton of homework waiting for me to finish so I knew that I was still on earth.

The Mister told me last week that his favorite food is a hamburger. So, I eagerly looked for a recipe that I could try that would fall into the hamburger category and I found “Smothered Hamburg Patties.” One thing I’ve noticed in the vintage cookbooks is that hamburgers 60-70-80 years ago were very different than what we call hamburgers. There were rarely any buns and they were often called “chopped sirloin patties” or some variation of that.

Note: I’m giving the original recipe that serves 8 but I cut the recipe in half when I made it because there are only two of us…

The Mister: “Pretty darn good! A little salty….but pretty darn good!”

If Heinz still makes soup, it isn’t available at my local grocery store. I used onion soup because the vegetable soups had high fructose corn syrup in them (and we’re trying to avoid HFCS). The downside was that the soup made it a bit saltier than we like…not oppressively so, but just a bit saltier than we normally eat our food. The next time I make this, I will probably eliminate the canned soup and just caramelize my own onions with a bit of garlic and add some low sodium beef or vegetable broth. I will then pour that over the patties before baking.

For waist watchers, this isn’t exactly a low calorie food, coming in at 8 points using Weight Watcher’s E-tools’ recipe builder. That said, the patties could be made A LOT smaller and still be satisfying. I was surprised by how large and filling these patties were.

Is this recipe a keeper? YES!

It is unanimous in our home: We don’t particularly care for pork chops. So why do I buy them? Well, I won’t anymore. But I kept buying them because they would go on sale for dirt cheap and I thought The Mister liked them. However, we’ve both decided that they just don’t have the same flavor as we remember from our childhoods. I’m guessing that is because they’ve basically bred all of the fat and tastiness out of pork in an effort to be “the other white meat” after sales dropped off of the face of the earth when consumers were told to avoid animal fat.

So, I had some pork chops in the freezer and I decided to give “Pork Chops Diane” from The Complete Round the World Meat Cookbook by Myra Waldo (1967) a shot. Is it a “keeper?” Let’s find out.

Pork Chops Diane

6 loin pork chops, cut 3/4 inch thick and boned

3 tablespoons butter

3/4 cup chopped onions

1 teaspoon salt

2 teaspoons prepared mustard

1/4 teaspoon freshly ground black pepper

1 cup hot beef broth

1 teaspoon Worcestershire sauce

So far, so good. There isn’t anything out of the ordinary in the ingredient list.

Trim the fat from the chops. Split the chops in half horizontally (to make thinner) but do not cut entirely through. Open flat like a book.

I didn’t have six chops but three pork chop steaks. Because they were already thin and large, I didn’t butterfly them (this is the “official” term for what the recipe describes above because you are opening the meat so that it looks like a butterfly).

Melt 2 tablespoons of the butter in a skillet; brown the chops in it on both sides.

Melt 2 tablespoons of the butter

Browning the chops

Remove the chops. Heat the remaining butter in the pan, add the onions, and saute’ 3 minutes.

Saute' onions in 1 tablespoon butter for 3 minutes

Blend in the cornstarch, salt, mustard, and pepper. Gradually add the broth, stirring steadily to the boiling point.

This is where I ran into trouble. I used prepared mustard as instructed but I think mustard still in its powdered form would have been better. I combined the ingredients before adding them to the butter/onion mixture and the dry ingredients clumped to the prepared mustard that then just stayed kind of lumpy when added to the skillet. After whisking it a little bit, I added the broth and whisked some more. I was able to get rid of most of the lumps but it just made for unnecessary work when the dry mustard would have worked just as well.

Add seasonings and broth

Add the Worcestershire and return the chops. Baste the chops several times, cover and cook over low heat 20 minutes or until the chops are tender.

Add the Worcestershire and return chops to pan

Serves 6.

I took one chop and cut it in half to make a perfect serving size for each of us. Since it was a hot night, and we didn’t want to eat a lot, I served it with sauteed cremini mushrooms and some applesauce (because The Brady Bunch has drilled into us that pork chops have to be served with applesauce).

Verdict: The sauce never thickened like I thought it would so it was pretty runny when I spooned some of it over the chop on the plate. That in itself is not a deal breaker. However, neither of us felt that this recipe was anything more than “okay.” The chops were still pretty bland tasting.

No, this recipe is not a “keeper.”
